Glazed Apple Loaf

Glazed Apple Loaf is another option for those apples you have sitting on the counter. Or, if you have to run to the store for some crisp apples, it’s definitely worth the trip! This loaf also makes a great gift for any occasion. A warm gift of love. By the way, it stores well. (If you keep it hidden!) If you like the flavor of apples and cinnamon, this is for you. I hope you love it as much as I do! Incidentally, you should make this as an air freshener! Obviously, it does amazing things for your kitchen.

Glazed Apple Loaf

Bread for Glazed Apple Loaf:

Flour, 3 cups sifted

Salt, 1 teaspoon

Baking soda, 1 teaspoon

Cooking oil, 1 & 1/2 cup

Sugar, 2 cups

Eggs, 3 large

Vanilla, 1 tablespoon

Cinnamon, 4 & 1/2 teaspoons

Nutmeg, 1/2 teaspoon

Apple, 3 cups, peeled, cored and diced

Pecans, 1 cup chopped

Glaze for Glazed Apple Loaf (Optional)

Powdered sugar, 2 cups

Butter, 1/2 stick, melted

Lemon juice or brandy, 2-3 teaspoons

Instructions:

Preheat oven to 350 degrees. Grease and flour a 9 x 5 inch loaf pan. Sift together flour, salt and baking soda. In a large mixing bowl, beat oil, sugar, eggs, vanilla, cinnamon and nutmeg until well blended. Add dry ingredients and mix until smooth. Fold in apples and pecans. Spoon into the pan. Bake in the center of the oven up to 2 hours or until the center of the loaf is firm. By the way, cool 10 minutes in the pan and then remove to a rack to cool completely. Mix glaze and beat until smooth. Incidentally, you can add more lemon juice or brandy, if necessary. Finally, pour glaze directly over the loaf. Hey, it’s ready to eat! So flavorful! Moreover, your kitchen smells so good now!
