Lemony, Lemon-Nut Bread

Lemon-Nut Bread is perfect for you if you love the soothing taste of lemons. By the way, lemon permeates this bread, warm or cold. Incidentally, speaking of cold, a friend in Michigan claims this bread cures the common cold! In addition, it stores well. However, you may just have to keep it hidden!

Seriously, my pastor’s wife back in Cheboygan, had the sniffles and I gave them a loaf of this bread. Consequently, Zoanne said it cured her cold! As a result, so many memories are tied to these recipes. By the way, I was the organist at that church and I sure do miss all my friends! Meanwhile, I hope you make some great memories with this, serving it to your friends. Incidentally, I used this bread as a gift fairly often.

Lemony, Lemon-Nut Bread

Ingredients for Lemony, Lemon-Nut Bread:

Sugar or Splenda, 1 cup or a mix

Butter or margarine, salted, 1/2cup

Lemon extract, 1 Tablespoon

Eggs, 2 large

Flour, sifted, 1 & 1/2 cup

Baking powder, 1 teaspoon

Salt, 1 teaspoon

Milk, 1/2 cup

Lemon rind, 1 grated

Pecans or almonds, chopped, 1/2 cup

GLAZE:

Fresh lemon juice, 1/2 cup

Sugar, 1/2 cup

Instructions for Lemony, Lemon-Nut Bread:

First, preheat oven to 350 degrees. Then, spray a 9 x 5 inch loaf pan with non-stick spray. Next, beat sugar, melted butter and lemon extract for one minute. Beat in the eggs, one at a time. Add dry ingredients (sifted together) alternately with milk. Gently, fold in nuts and lemon rind. Now, bake for 60 minutes or until bread feels firm in the center. Consequently, remove from the oven and allow it to cool a few minutes. Meanwhile, prepare your glaze and drizzle it over bread while it’s still warm. Finally, cool bread completely before removing from pan. Enjoy. (Really good with coffee or tea!)
