Bottom Layer of Chocolate Salted Caramel Tart:
First, soften and cream 1/2 cup of butter in mixing bowl. Beat in 2 egg yolks. Next, sift together 1 & 1/2 cups flour, 1/2 teaspoon salt and 1/2 cup cocoa. Subsequently, add that to first mixture and blend together thoroughly. Press the mixture into a tart pan and prick it with a fork. Finally, bake at 350 degrees for 15 minutes.
Caramel Layer/middle layer:
Next, in a medium saucepan, mix 2 & 1/4 cup sugar, 3/4 cup corn syrup and 1/4 cup water. Cook over medium heat for 15-20 minutes. Stir frequently. Next add 1 & 1/2 cup cream, 1/3 cup butter and 1 teaspoon vanilla. Bring to a rolling boil. In the meantime, allow that mixture to cool about ten minutes. Then, pour your caramel mixture over the chocolate layer.
Chocolate Topping of Chocolate Salted Caramel Tart:
Melt 3 & 1/2 ounces of dark chocolate. Add 1/3 cups of hot cream. Blend those two ingredients together well and pour over the first two layers. Gently smooth the topping out. Finally, sprinkle coarse salt over the top. Allow the tart to cool before serving.
