Swedish Fruit Soup is “Fruktsoppa” in Sweden. By the way, it is a popular dessert in Sweden and Norway. Incidentally, growing seasons are shorter there, so using dried fruits makes all kinds of sense. By the way, I’m half Swedish and I happen to love their cooking! I’ve loved it ever since eating Grandma Nelon’s cooking! Moreover, there are hundreds of recipes for it. However, this is the one I like. In addition, it keeps well in the refrigerator.
Ingredients for Swedish Fruit Soup:
Dried mixed fruit, an 11-ounce package
Golden seedless raisins, 1/2 cup
Stick cinnamon, 3-4 inches
Water, 4 cups
Unpeeled orange, 1 cut into 1/2 inch slices
Unsweetened pineapple juice, 2 & 1/2 cups
Currant Jelly, 1/2 cup
Sugar, 1/2 cup
Quick-cooking Tapioca, 2 Tablespoons
Salt, 1/2 teaspoon
Instructions for Swedish Fruit Soup:
Combine the first four ingredients in a saucepan and bring them to a boil. Simmer uncovered for about 30 minutes. Add remaining ingredients. Finally, cover and cook over low heat for about 15 minutes. Stir occasionally. It’s ready to serve, when it is cold. By the way, it tastes better if it sets overnight. That gives the flavors a chance to get acquainted!
I recall inviting my SCUBA diving friends over for dinner back in the 70s! After some delicious Swedish Meatballs, and baked acorn squash, I served this fruit soup. It seems like just yesterday! I’m sure you know what I’m talking about. Super glad I did those things when I had the opportunity. Moreover, the memories are priceless.
