Pumpkin Chiffon Pie with a Gingersnap Crust! By the way, it’s so good that people who don’t care for the regular pumpkin pie have raved about this. Incidentally, it’s really light and delicately flavored. Meanwhile, it’s not as tricky to make as you might think. Years ago, we had a pot luck dinner at the vet clinic where I worked. Our vet said he didn’t usually care for pumpkin pie. However, he loved this one. It’s very light! Hopefully, you will win someone over as well.
Crust for Pumpkin Chiffon Pie:
Butter or margarine, 1/2 stick
Gingersnap crumbs (about 30 cookies.) 1 & 1/4 cup
Preheat oven to 375 degrees. Melt butter in a medium saucepan and blend in crumbs. Press mixture into the bottom and sides of an 8-inch pie pan. Bake 7 minutes. Cool before filling.
Filling for Pumpkin Chiffon Pie:
Egg yolks, 2, beaten
Dark brown sugar, 1/2 cup
Unflavored gelatin, 1 package
Cinnamon, 1/4 teaspoon
Nutmeg, 1/4 teaspoon
Ginger, 1/4 teaspoon
Salt, 1/4 teaspoon
Canned pumpkin, 3/4 cup
Milk, 1/2 cup
Egg whites, 3 at room temperature
Cream of tartar, 1/8 teaspoon OR 1/2 teaspoon lemon juice
Sugar, 5 Tablespoons
Dream Whip (optional)
First, beat the egg yolks in saucepan. Add brown sugar, gelatin, spices, pumpkin and milk. Cook over medium heat, stirring constantly, until mixture comes to a boil. Then, cool by sitting the pan in ice water until it mounds. Next, beat egg whites with cream of tartar OR lemon juice. Sprinkle in sugar, one Tablespoon at a time, while beating until peaks are formed. Finally, fold egg whites into pumpkin mixture and pour into crust. Chill for at least 2 hours. For a deeper filling, double recipe or add Dream Whip. By the way, you will have a leftover egg yolk; I just throw it in at the beginning with the other two yolks.
